Yesterday, I hosted a ladies lunch for my dear friends and colleagues, Ann and Terra. It was great to catch up and get ourselves ready for the upcoming school year. We chatted over lunch which featured a fresh, watermelon and feta salad – easy, quick and delicious!
A true summer staple – watermelon is a versatile ingredient. In this recipe, it compliments the tang of the feta and absorbs just the right amount of the balsamic glaze, to give you a savory and sweet party in your mouth.
quarter seedless watermelon chopped
3/4 cup feta cheese
3 tbsp balsamic glaze
- In a large bowl, add watermelon and crumble feta on top. Drizzle with olive oil, balsamic glaze and pepper to taste. Garnish with fresh basil and eat up!
P.S. If you can’t find balsamic glaze but have balsamic vinegar in your pantry, simple boil 1/2 cup of vinegar for 6-7 minutes. The vinegar will reduce and you will be left with a silky, sweet glaze.
It’s really that easy! This salad is a great way to use up leftover watermelon and spice up your everyday leafy lettuce regiment.
