Summer Staples | Chunky Guacamole

Avocados might be my absolute favourite fruit! Full of vitamins and nutrients, avocados are a versatile imageingredient to keep handy in your kitchen. Slice them on some toast, throw them in a salad, or make chunky, delicious guacamole with them.

Guacamole is the perfect party pleaser. Pair your dip with some corn tortillas or multi grain pita, and you’ll be sure to make your guests happy.

This recipe is easy to make and can be adapted into many variations as well.


1 large ripe tomato finely chopped

3 avocados, very ripe but not bruised

juice 1 large lime

handful of chopped cilantro

1 small red onion finely chopped

salt and pepper to taste

image1. Finely chop your onion and tomato and put in a bowl. Halve and stone the avocados (saving a stone) and use a spoon to scoop out the flesh into the bowl.

2. Add your lime juice, cilantro and season with salt and pepper. I use a fork to mash everything together. It blends the ingredients and leaves the avocado a little chunky. If you want a smoother guacamole, just blend with a whisk for a creamier texture.

3. If not serving straight away, sit a stone in the guacamole (this helps to stop it going brown), cover and chill until needed. Before serving you can add some cilantro as well.

It really is the perfect dip for any summer party. A definite crowd pleaser that even the kids will enjoy. You can use lemon juice instead of lime, take out the onions if you’re not a fan. It really can be made into your own signature dip. I’ve even managed to convert my hubby Mike, who was not a fan of avocado. But he sure likes my guacamole!
