Happy hump day everyone!
As much as I love to cook, I hate the mess that I’m left with when it’s all done. That’s why I’m a sucker for one pot dinners. One pot = less mess.
This recipe is one of my dad’s favourites! Mild sausages in white wine, with rosemary potato wedges.
2 large sliced onions
5 large Yukon potatoes cut into wedges
1 sprig of rosemary
2 cups of veggie stock
1 cup of white wine
1 teaspoon of garlic powder
8 mild pork sausages cut in half
Pre heat oven to 425 degrees. In a roasting pan, add sliced onions and potatoes. Season with salt, pepper, garlic powder and olive oil. Add cut sausages, rosemary and veggie stock.
Cover with lid and cook for one hour. Uncover half way and add wine to pan. Flip sausages and continue to cook until potatoes are tender and sausages have cooked through.
One pot dinners let you spend more time eating and less time scrubbing. Pretty sweet deal!
