I’ve never really been a morning person. By that I mean, a morning eater. For as long as I can remember, I never ate before 8 am. As a child I rarely ate breakfast – awful, I know.
My father reminded me daily what a mistake I was making, by not eating at the start of the day. Yet, I never changed my habits. Until recently.
Last fall, I transferred schools and was happy to learn my new location had a later morning start. I quickly adjusted to sleeping in longer and having more time in the morning to get myself organized. This included more time to sit and enjoy my breakfast. I hate being rushed, and this new routine allowed me the time to prepare something to get my day started right!
By no means does this suggest I am whipping up an omelette every morning. What I do have time for are easy to prepare, nutritious meals to kick-start my brain and body. Sometimes it’s my favourite Vega smoothie or greek yogurt with granola and fruit. The last thing I need in the morning is a breakfast conundrum. Less prep and cooking, the better.
One of my go-to quickies involves toasting bread. That’s it really! Throw some flax or chia bread in a toaster – painfully hard, I know. Grab a ripe avocado and scoop out the green goodness onto the bread. Top with vine tomatoes, some sea salt, pepper and drizzle with olive oil. Breakfast in under 5 minutes. It doesn’t get better than that. It’s healthy, packed full of flavour, nutrients and you didn’t have to break a sweat.
Nowadays, I don’t leave the house without eating breakfast. I feel better not just in the morning, but throughout the day. My dad can totally relish in an “I told you so!” moment now – just this once.
