Sticky Thai-inspired Chicken Thighs

  • In a small bowl combine the sauce ingredients and set aside.
  • In a small bowl combine the rub ingredients until full incorporated. Add the rub to the chicken thighs and thoroughly combine.
  • Heat a large saute pan on medium/high. Once the saute pan is hot, add oil until it begins to shimmer. Using tongs add chicken thighs to the skillet, do not overcrowd the thighs. Sear for 2-3 minutes on each side. Set aside and continue to sear the chicken thighs until all are seared.
  • Add sauce ingredients to the pan and whisk to bring up the bits or fond at the bottom of the saute pan. Cook for approximately 5 minutes the sauce will begin to thicken and reduce. Add the chicken back to the pan and cook for about 10 minutes, basting the chicken with the sauce. The sauce will caramelize and thicken. You can also bake this instead of finishing the chicken on the stove if you prefer. After you have added the sauce to the pan, add back the chicken and bake for 8-10 minutes at 400 degrees. The chicken should temp at 160-165 degrees. The chicken will continue to cook outside of the oven and typically raise another 5 degrees.
  • Serve the chicken with coconut rice and a vibrant garden salad. Garnish the chicken with green onion, peanuts and parsley.
