Breaded Pork with Mushroom Gravy

- Preheat oven to the lowest it will go. This is to hold the pork chops after frying them. My oven goes to 170 degrees. I will prepare a baking sheet with paper towels to absorb the oil from frying.

- On medium/high heat add olive oil to a saute pan along with 2 tb of butter. Once the oil is shimmering add the pork chops one at a time. Depending on the size of your pan you can add two. Do not overcrowd and cook until browned and crispy on each side. It should be about 4-5 minutes per side. Hold the pork chops in the preheated oven until mushroom gravy is ready.
- In the same pan add the other two tb of butter. Add the mushrooms and saute. The mushrooms will absorb the oil and butter in the pan. Make sure that you are stirring the mushrooms around with a rubber spatula. Once the mushrooms begin to release their moisture, continue cooking for about 1 minute.
- Add the flour to the mushrooms in the pan and cook for about one minute while stirring.
- Add about 1/4 cup of the beef broth and stir. The mixture will be thick like a roux, continue to slowly add the beef broth while stirring. The mushroom beef broth sauce will begin to thicken. At this time you can add heavy cream to the sauce.
- You can add the pork chops to the gravy mixture if you like or pour the gravy on top of the pork chop. Garnish the pork chop with fresh parsley.
